While statins will lower your cholesterol and decrease your cardiovascular risk, studies have shown the the total amount of saturated fat that you take in correlates with the progression of atherosclerotic vascular disease. There is also evidence that the high fat levels in your blood after a meal high in saturated fat can cause a malfunction of some of the protective function of the cells which line your arteries (endothlial dysfunction).
